Can I just have the business card for now

Yes. Plenty of people start with the card and add the rest later. Ask for the whole set to be planned anyway, so the letterhead matches when you come back for it.

What about the box of old letterheads in the cupboard

Use them up. There’s no sense binning good paper. Tell us when the box is getting low, and the new set can be ready in time for the reprint.
