Do I still need a letterhead if I email everything

Why does letterhead design go wrong in Word

Because most letterheads get drawn as a picture and then dropped into Word, where they misbehave immediately. The logo drifts. Your typing lands on top of the address. Somebody hits return once too often and the whole lot slides onto page two. What you get here is the printed version and the Word version built as two separate things that happen to look identical. The print one has proper margins and colour set for the press, so a stack of headed paper comes out matching your cards instead of nearly matching them. The Word one has the header and footer pinned where they belong, margins set so your text never collides with anything, and typefaces that exist on an ordinary computer rather than ones that quietly swap themselves out on your bookkeeper’s laptop. Then you write a letter, print it on plain paper, and it still looks right.

Can I just run it off on my own printer

Yes, and that’s what the Word version is for. Home and office printers leave a white border, so the design gets set up to sit sensibly inside it.

Can you do a matching invoice and quote sheet

Yes, and it’s worth doing together. Once the letterhead is settled the other sheets follow the same grid, so your paperwork stops looking like three different companies.

My logo is only a JPEG, is that a problem

It’s workable but not ideal, because JPEGs go soft in print. Send what you have and you’ll be told plainly whether it needs redrawing first.
